Gözleme is a traditional savory Turkish flatbread and pastry dish, made of hand-rolled leaves of yufka dough that are lightly brushed with butter and eggs, filled with various toppings, sealed, and cooked on a hotplate or griddle plan.
I first tried one at our local Farmer’s Market. The mother and daughter team who are Market Fresh Gözleme make them and they are always in high demand. I have tried the spinach and feta, mushroom, the lamb, and the vegetarian. It is my treat for lunch when I go to the Farmer’s market. They come with natural yoghurt, lemon or chilli flakes or all three and they taste absolutely delicious !
The photo below is not mine and belongs to Market Fresh Gözleme
I’ve made my own at home using the recipe below and I was quite happy with how they turned out using my griddle pan. They definitely weren’t as thin and light as the ones at the market but I didn’t want to try flinging them around in the air. I wouldn’t have had any thing for dinner if I had, just the mess to clean up.
I’ve put a couple of recipes below for you to give making them a try. I’m sure there’s hundreds more variations online if you google them.
I know the spinach and feta one works as that’s the recipe that I tried. I would probably use that as my base and just make the fillings from the other recipes in the future. If you try one of the other recipes let us know how it turned out in the comments below.
Do you have a favourite Gözleme recipe? Other countries have their own flatbreads. What is your Countries flatbread recipe and what’s it called. Let us know in the comments below. I for one would love to try them.
Enjoy !
